Probably how she was in Sonic Adventure, I think her storyline and personality was brilliant in it, after that she just became annoying...

I thought she had a couple shining moments in the comics as well. Though, in the games, yeah she was quite annoying.

Befriending Gamma in SA1. Talking Shadow down in SA2, though this scene could have been handled better. Her SonAmy moment in Chronicles, but this is optional. Sonic's been nicer to her lately though.

And when he dropped her off (with him closing her eyes and running away before she could see him) after she got rescued from the Final Fever. This same moment happened in Spagonia, Sonic Unleashed. Other than that, I like how he wanted Sonic to bodyguard her pet (who was that pet anyways?).

Her scene with Shadow in Sonic Adventure 2, followed by her role in Sonic Adventure. Both serve as proof that Amy wasn't always just some chick who was completely defined by her insane fixation on Sonic. She loved him, but she had goals of her own and could take care of herself.
Sadly, the influence of Sonic X seems to have warped her into a caricature of her original self. Now it seems like she's only there to add humor by making Sonic uncomfortable.
