I'm a massive fan of sim (and semi-sim) racing games, though I heavily enjoy many arcade racers as well.
I've played some of the Simbin racing simulators, Live For Speed, all of the Forza Motorsport games, all of the Gran Turismo games (except 5, due to lack of PS3), Colin McRae Rally 2005, Sega GT 2002, a few of the Nascar games (Nascar Racing 2003 Season being the most notable, quality and sim wise in my mind), Ferrari F355, and probably more I can't think of.
My favorites would have to be Forza Motorsport 4, Gran Turismo 3 A-Spec, Sega GT 2002, and Colin McRae Rally 2005. Almost all of these are amazing racing games and all are partially responsible for why I'm such a good racer today (in games and, at least with karting, in real life) and so into cars and motorsports. The only one that wasn't was CM2005, as unfortunately I didn't learn of it until last year. It is an absolutely amazing game for simulating the feel of rally driving though.
Regarding the Arcade side, There's way too many of them I've played for me to list the ones I've played, so I'll just list off my favorites. Hang-On (Sega Genesis, AH YEAH), Need for Speed 4: High Stakes, Burnout 3: Takedown, Test Drive: Eve of Destruction, and F-Zero GX are all games I enjoy greatly, and some of them I still play occasionally when I get the chance.
