No, because that's the only reason she was created, basically, she can be less of a stalker, but switching roles, IMO, differentiates the character from their original purpose, making them unneeded....

Their "original purpose" was back when Sonic's story was two screens of text at the beginning and two at the end. It was like Mario's story: save the princess or something.
Sonic's story has evolved. It is no longer just the OMG DEFEAT BAD GUY mentality of the past. And as the story evolves, it's characters must evolve with it. And if Amy stays the cookie cutter female she has always been, well, the story will eventually leave her in the dust.
Yeah, Sonic's story isn't exactly the greatest thriller. But one huge factor in that is that the characters are so stale, so one-dimensional. So how to fix that? Mix things up. Have her be the one to be stalked by Sonic. Breathe a little life into Amy.
